I hope everyone is enjoying this fabulous Thanksgiving weekend. We are enjoying a nice break also, but will hit the ground running tomorrow as we continue to work on the details of Homegrown Scratch Kitchen. We nailed down the menu last week and I have shared a few more pictures. Some of the plating will be different but the flavors are delightful!

The students made a great pitch to the "Investors" and are seeking 2500.00 to make their restaurant concept come alive!! They have finalized the menu and are testing recipes now! We will send some sneak peeks and post the full menu next week!
Hello fellow foodies!
Homegrown Scratch Kitchen is quickly coming together. The students did their first run through of the menu yesterday and some will spend today tweaking each recipe for presentation, texture, seasoning, and flavoring. Some other students will be working on designing the décor of the dining room and tables.
We will now be accepting reservations for our four exciting nights of service, December 11-14. There will be time slots available from 6:00-6:20 and 7:30-7:50. This will be an excellent opportunity to dine at Okmulgee's finest restaurant! Reservations can be made by sending a message to Chef Byers at Julie.byers@okstate.edu.
The project is more than half way funded, but we still need your help to make this a great success! Tax deductible donations can be made in any amount you choose. The perks offered are a wonderful way to support these fantastic students and earn yourself a wonderful appetizer of Triple Cheese Stuffed Mushrooms or a Frozen S'more dessert.

The School of Culinary Arts on the campus of OSU Institute of Technology in Okmulgee, OK is one of the oldest culinary schools in the country. Since 1947 the school has given students job skills that are vital to success in the industry. The mission of the School of Culinary Arts is to train students to be world class chefs and food service managers. The faculty and staff are committed to providing a variety of engaging experiences for all students through specialized coursework and real world industry training.
The School of Culinary Arts is committed to creating new and engaging experiences for our students. We are excited to offer a series of elective specialty courses that explore different topics. The second half of the Fall 2017 term, we are offering CUA 2213 Contemporary American Restaurant. This is an exciting class which will allow students to design, build, execute and evaluate a restaurant concept from the ground up. What better way to learn how to open a restaurant than to actually do it. Students will meet throughout the course to come up with a concept and design menus and operational procedures to make it happen. The last week of the course, the students will then open their restaurant for evening service in the current Tech Room at the school. This experience will be very similar in format to what you see on television where chefs compete in teams to open a viable restaurant concept.
The funds raised will allow the students to transform the current space representative of their concept for the pop-up restaurant week. They will be allowed to design and build everything from layout, decorations, menus, wall covering, table settings, etc. to support their concept.

Hello! I am Julie Byers, the instructor for the Contemporary American Restaurant class. The students and I are excited to begin this adventure. I happened upon an article today in the October 2017 issue of Foodservice Director Magazine about pop-up restaurants and found it interesting. I love the part about pop-ups being a great way to "offer diners something that is not currently available". We plan to bring you something that is unique, trendy, and delicious.
